This past Sunday we made a trip to the farm. The weather was perfect and the food was even better. Turkey, mashed potatoes, gravy, turnip greens, green beans, cream corn, slaw, dressing...OH.MY.LORD. Sam's grandmothers cooking is the true definition of being spoiled. Later we walked to see the cows. They had 2 new baby calf's. So cute!
Turkey-Avocado Clubs
Ingredients:
1/3 cup thinly sliced red onions
2 tbsp apple cider vinegar
8 slices turkey bacon
1 avocado
1/2 cup plain nonfat Greek yogurt
salt and pepper
whole grain bread, slightly toasted
romaine lettuce
1 tomato, sliced
12 oz. low sodium deli turkey breast
1/2 cucumber. sliced
Directions:
Toss the onions, vinegar and 2 tbsp of water in a bowl, let sit for 15 minutes, then drain. Meanwhile, cook the turkey bacon until crisp.
In another small bowl, mash the avocado and yogurt until combined. Add salt & pepper.
Spread avocado mixture onto each slice of toast. Top with lettuce, tomato and then salt & pepper. Add a layer of turkey breast, bacon, cucumber and onions. Cut sandwich in half to serve.
