Friday Feature

Chicken Salad is a staple of Southern Cuisine. There are so many variations and I definitely have my favorites...Green's Grocery, Marti's at Midday, Lumpkin Cafe and sadly 5 Points Deli (they recently closed their doors). As we all know the better the mayo, the better the chicken salad. In this post I featured the cookbook Southern My Way by Gena Knox. I finally got around to making her Tarragon Chicken Salad and not only was it delicious, it's HEALTHY!

Ingredients:
3 lbs bone-in, skin-on chicken breasts
1 tbsp. Olive Oil
1 c. chopped Celery
3 tbsp. chopped and toasted Pecans
1/4 c. Light Mayo
1/4 c. Plain Yogurt
1 tbsp. Lemon Juice
1 tsp. Dijon Mustard
3 tbsp. fresh Tarragon, roughly chopped

Directions:
Preheat oven to 375 degrees. Place chicken on parchment-lined baking pan, drizzle with olive oil and season with S & P. Bake for 35 minutes. I boiled my chicken and it worked just as well. Once the chicken is cooled, remove meat and chop into chunks. You should have about 3 cups.
In a large bowl, combine mayo, yogurt, lemon juice, mustard, and tarragon.
Add in the chicken, celery, and toasted pecans. Combine well and season with S & P. I had more than 3 cups of chicken so I added more yogurt and mustard. I also love celery and pecans so I added more of those as well. ENJOY!

Lemon Herb Hen

I always like to scan the meat and poultry section at the grocery store to see what deals they have. Lately, I have been finding great deals on Hen's. I guess they are trying to get rid of all the leftover frozen birds from Thanksgiving and Christmas.

On a side note...What is a Hen? Why wouldn't they just call it a Chicken? I was a little confused when Sam tried to explain it to me. Chickens are male and female. Hens are adult female birds. Still a little confused...

Lemon Herb HEN


Ingredients:
1 (about 3-5 lb) Hen
2 Lemons
2 Onions
1/2 C. Olive Oil
1 tbsp. Vinegar
1 tbsp. Butter
Spices (Oregano, Garlic Powder, Parsley, Minced Garlic, S & P)

Directions:
Preheat oven to 350 degrees. Wash hen, pull out insides and pat dry. I cook with a cast iron skillet but any oven safe pot will work. Place hen in cast iron skillet. Chop lemons and onions and stuff hen. Lay any leftovers around hen. In a small bowl, combine olive oil, butter, vinegar and spices. With a basting brush, cover entire hen. Bake for 1 1/2 hours. Let cool before carving. Enjoy!

My Shrimp Gumbo Creation

Last night I made a Shrimp Gumbo creation. I just threw a bunch of stuff together and it turned out WONDERFUL. Let's call it "Ashley's Shrimp Gumbo." We are even having leftover's tonight. I know the picture doesn't do the Gumbo justice but it was delicious.


INGREDIENTS:

1 lb Shrimp- about 15 or so. (we used fresh shrimp via Mr. Hunnicutt    and it really makes a difference)
1 quart fresh stewed tomatoes (via Sam's garden which also makes a huge difference)
2 small cans tomato paste
1 bushel fresh Okra- about 15-20 chopped.
1 cup cooked black-eyed peas
3 strips of cooked bacon (more if you like bacon AND save the grease to saute the okra)
Brown Rice (I use Kroger's boil-in-bag rice ready in 10 minutes)
Seasoning- Mixture of minced garlic, salt & pepper, red pepper flakes and oregano.

DIRECTIONS:

Boil the shrimp for about 3 minutes and set aside to cool. In sauteing pan, pour in the stewed tomatoes, tomato paste, black-eyed peas and season to your tasting. Cook the bacon and set aside to cool. Saute the chopped okra in the grease for about 6 minutes and pour into tomato mixture (including grease). Cover and simmer about 20 minutes stirring occasionally. While simmering, peel the shrimp. After 20 minutes add in the shrimp and crumble the bacon into the mixture. Let simmer for a couple more minutes. Boil the rice while the mixture continues to simmer. Serve the sauce over rice in a deep dish bowl. YUMMY!!

Trappeze Beer Tasting

I have really been slacking on the blogging this past week. I have been swamped at work with interviews, tours and traveling for hours. I truthfully don't even have time to be blogging now but I don't want to get too far behind. I attended my February Mini-Meeting for the Junior League this past Thursday night at Trappeze Pub in downtown Athens. We had a wonderful evening talking, eating, tasting different beers
and learning about what it takes to brew beer...very interesting!


 Beer Tasting:
1. Victory Prima Pils
2. Sierra Nevada Glissade Golden Bock
3. Avery IPA
4. Southern Tier Choklat Imperial Stout
5. Ommegang Zuur

All of the beers were delicious. The Southern Tier Choklat is brewed with 40 pounds of Belgium Dark Chocolate. Seriously...it was amazing. I even took Sam back the next night so he could enjoy them too. Sign up for the Trappeze newsletter and receive great deals and access to special tappings.

Surprise Surprise

If I can't rely on Sam to enjoy Valentine's with me I know one person who will...MY DADDY! Yep, he just surprised me at my office with a Valentine's gift bag. Too Sweet...it was filled with Valentine's Chex Mix, a Clinique gift bag, and a card.


I'm not sure if the Chex Mix has a recipe but it was filled with the following:
  • Pretzels
  • Chocolate Teddy Grams
  • Craisins
  • Cashews
  • Valentine's M&M's
  • White Chocolate Raisins
Now I'm seriously getting back to work with my Chex Mix in hand!!

Happy Valentines Day!

I feel like I have spent half my morning looking at all the Valentine's blogs and romantic pictures. I'm sure some of you are thinking "GAG" but the only reason I like to look at them is because I know I will never have a "Blog-Worthy Romantic Valentine's." Sam is so against cheesy holidays and he even reiterated his dis-like for them last night. I then proceeded to tell him how much I enjoyed them...so I take back the "never" statement and let's just say he is "in training."

We are having a simple dinner tonight and a bottle of wine. I am also going to attempt to make Sam's favorite dessert...Red Velvet Cake courtesy of his grandmothers "secret" recipe.

Here is an OLD picture from Valentine's of 2005. I would have posted Valentine's of 2004 when Sam and I had our first official date but I look a little busted with my bleach blonde hair so the picture didn't make the cut!

100 DAYS

There are exactly 100 days until Sam and I tie the knot! I can't believe it. I feel like just the other day we got engaged and now it has been almost 8 months! Holy Cow! Here is my current TO-DO LIST which is slowly but surely dwindling down...
  • Guest Book
  • Order Invitations
  • Drop Invitations off at Calligrapher.
  • 3rd dress fitting this Saturday in Atlanta.
  • Pick out Sam's ring.
  • Honeymoon itinerary. (Train times and MUST SEE places)
  • Confirm ceremony music..3 string quartet or classical guitar?
  • Daddy/Daughter and Mother/Son Music.
  • Food tasting Feb. 26th..Yummy!
  • Meet with Photographer and Coordinator at Madison Oaks.
***AND Sam takes the LSAT this Saturday! Pray for him!

There are MANY more things on our to-do list but a lot of them will be kept a secret until our wedding day!

Junior League Updates!

There are so many exciting events happening in the next couple of months for the Junior League. Our Seeing is Believing Tour kicks off this week, Kids in the Kitchen recipes, Food2Kids, DIAD projects, mini-meetings, and BARGAINZA dates have been set!
Bargainza will be held March 25th and 26th here in Athens. Location: Winn-Dixie on the East Side (tons of space and tons of parking). Tickets are $5.00 on Friday and $3.00 on Saturday. Bargainza is like a giant thrift sale with tons of deals on everything. If you have any donations please contact me! We will take furniture, kitchen items and even baby clothes...Just about anything.


Another exciting event that is coming up for the Junior League is the New Provisional Member session. The Q&A session will be held Wednesday, March 30th at the Taylor Grady House from 12:00 pm to 6:00 pm. (There will be a lunch and evening session) This will be an opportunity to see what the Junior League of Athens is all about and meet new people. Proposers and Letters of Intent are due no later than May 1st.

February's Featured Recipe
Easy Weeknight Chicken Pot Pie

4 boneless, skinless chicken breasts; chopped
1 (10 oz) can chicken stock
1 (15 oz) can mixed vegetables; drained
1 stick of butter; softened
1 (15 oz) can English peas; drained
1 cup all-purpose flour
1 (10 3/4 oz) can cream of chicken soup
1 cup milk

Preheat oven to 375 degrees. In large mixing bowl, combine chicken, mixed veggies, peas, soup and chicken stock. Pour into baking dish. Combine butter, flour and milk in blender and pulse until smooth. Pour over chicken and veggies. Bake 30-45 minutes or until crust is golden brown. Enjoy!

North Georgia Registry

This past weekend my friend Allie came into town and we headed to the Mountains to do some registering. Sam and I decided it would be best if we registered in Clarkesville and Cornelia so it would be more convenient for our guest who live in that area. We met Sam's Aunt and Grandmother at Habersham Hardware and I was completely blown away at how many nice things the Gift Shop had. I fell in love with everything and can't wait to go back. We then enjoyed lunch at Black Dog Bistro where Allie and I split the Grilled Chicken Sandwich and Volcano Cake (OMG!). We went to a couple more stores registering for items that "country women" say are a must, decorative place settings, and tons of fun items!




We ended up registering at Harbersham Hardware Gift Garden, Woods Furniture (they actually have things besides furniture) and The Nest. All three places were adorable and hopefully will be more convenient for our North Georgia guest then having to drive far or order something online. I have updated our website http://www.ashleyandsam.com/ with our registry info. I can't believe our wedding is only a few short months away!

ReENGAGE and Marriage

I have found a new blog and it is one of the cutest and most inspirational blogs I have read. I wanted to share it with y'all in hopes that one can never have too much advice.

http://www.todaysletters.com/ is about the life of a young married couple and all the trials and tribulations it took to get their relationship and marriage where it is today. Being engaged, and soon to be married, Sam and I often find ourselves questioning our decision not to do marriage counseling and instead relying on our relationship, friends and family to be there for us as we grow and spend the rest of our lives together. I definitely suggest scrolling through their blog and listening to the ReENGAGE message they give. It is only an excerpt but leaves you wanting to hear more. On their anniversary the couple spent time reflecting the past years of their relationship. They came up with a list of 10 Things That Have Made All The Difference in their marriage.

1. Tuesday Night Questions: They ask the same 4 questions every Tuesday night and they feel these questions have made a huge difference in how they love and serve one another throughout the week. How did you feel loved this past week? What does your upcoming week look like? How would you feel most loved & encouraged in the days ahead? How would you best feel pursued in intimacy this week?

2. A Small Metal Box: The couple made a pact that each time they made love they would put a dollar in the special metal box and save it for their 50th anniversary trip. They feel this has been a great way to creatively pursue intimacy with one another. The only advice they give is to not count the money in your box...Focus on QUALITY, not quantity.

3. Traveling Journal: They take turns writing in this journal, hiding it for the other one to find in unexpected places. It's been found duct taped to the shower, in suitcases when traveling, even in the refrigerator. They feel this is a great way to verbally affirm and encourage one another.

4. They (try and) Conflict Well: Conflict is inevitable in relationships, but they believe it exists to make you better, not bitter. Share disappointments and hurts. They say it isn't easy but it's necessary in maintaining marital oneness.

5. Play Together: Be active as husband and wife. Throw a Frisbee, fly a kite, go on walks, build forts together, playing together will help find your inner child. Being active can be romantic. It will keep you connected both physically and emotionally.

6. Pray Together: One of their favorite ways to end the day is by praying together. Pray for your friends, family and for wisdom in your marriage. This will help you stay spiritually connected.

7. Celebrate Each Other: Make a big deal out of anniverseries, birthdays, holidays, and even smaller personal accomplishments. Be each other's biggest fans.

8. Don't Do Marriage Alone: Your friends will be incrediably helpful in showing you some bigger issues in marriage. It wont be easy to share your struggles, because of pride and embarassment, but realize that most couples will be struggling with the same thing.

9. Greatest Gift (Self Work): The greatest gift to give each other is to know yourself. Work through your family junk. Attack your problems together, instead of attacking each other about your problems.

10. Study One Another: Someone once told them that no matter how long you've dated your spouse, the day you get married you're essentially committing your life to a total stranger. There was so much they didn't know about each other even after 5 years. Interview your spouse regularly.

Bonus 10b. Dude Time/ Girl Time: They feel that sometimes one of the best things your can do for your marriage is to spend time apart. Take a trip with the guys, have a weekend with the girls. It is crucial to your overall mental health and well being.

OK WELL THAT WAS A LONG POST! But I wanted everyone to hear this advice. It seems fun and that it would keep your relationship energetic.
