Spring and Wedding Season

Sam and I started off our weekend with a trip to The Home Depot. The weather was perfect and we decided it was finally time to plant some herbs and give our yard a little color. Of course, since we are in a rental home everything went into pots and not the ground. We cannot wait to finally be able to landscape a yard. 



Later that evening, we headed to Atlanta to celebrate the wedding of Amanda and Alex Wilbanks. The ceremony and reception took place at the Biltmore Ballrooms.
Everything was perfect from the bride, to the flowers, to the dancing. We had a wonderful evening with friends and family.






We wish Mr. and Mrs. Wilbanks so much happiness and of course a wonderful honeymoon. I cannot wait to check out all the pictures from the wedding. Date Balls, Breakfast Casserole and Hiking

I have been on the lookout for healthy snacks for breakfast and lunch. I finally gave in and tried this recipe even though I didn't know if I would be fond of dates. I loved them! And so did the husband. He ended up eating all the date balls half way through the week. They are healthy, small portions, and just plain delicious.

I actually tripled the recipe so that I would have more to snack on.



I have made this casserole probably 3 weekends in a row and it still hasn't gotten old. It is so simple and so good. Having to remember to make a casserole the night before is always a task in itself. And the best part is it warms up nicely throughout the week for breakfast.

This past weekend, Sam and I ventured an entire 2 miles from our rental home to a nature preserve called Little Mulberry Park. Our neighbors had told us about the hiking and fishing and we finally got a chance to go. (It also has to highest lookout in Gwinnett County...Whoa...I know you're jealous.) It was a perfect Saturday, not to hot and a great breeze. We probably hiked for 4 hours. It was beautiful and very well maintained. And it had some serious hiking. At one point we were both sweating and thinking "what did we get ourselves into." But we can't wait to go back!
