An Engagement!

This past week, while my sister-in-law and her boyfriend were skiing out West in Breckenridge, Colorado, HE POPPED THE QUESTION!

We could not be more excited that she is going to spend the rest of her life with such an awesome guy and one of my husbands best friends.

Chicken Marsala

Sam and I love mushrooms and when I found this recipe on the best website ever Pinterest, we decided to give it a try. And it was DELICIOUS! Of course, we added almost triple the amount of mushrooms the recipe calls for and ate every single one.

Easy Chicken Marsala
2 skinless, boneless, chicken breasts
salt and freshly ground black pepper
1/2 cup all purpose flour or corn starch for gluten-free
1/2 cup olive or vegetable oil
8 ounces container of mushroom, sliced and cleaned
2 tablespoons butter
1/2 cup sweet Marsala wine
1/4 cup chicken stock
1/4 cup sherry or dry white wine
Optional: 2 tablespoons heavy cream
Garnish with chopped parsley or oregano

Directions:

Split each chicken breast through the middle to make 2 pieces. Place plastic wrap over them and pound each one flat using a meat tenderizer/mallet until they are about a quarter inch thick. Season a good amount of salt and pepper on both sides of each piece. Place some flour on a plate and and dredge each piece of chicken in it.
 
Heat the oil over medium-high heat and when the oil is hot fry each piece of chicken for 3-4 minutes on each side until they are golden brown (this may require you to do this in 2 batches). Remove chicken and place them on your serving platter covering them with foil. Carefully soak up any remaining oil with paper towels and discard.
 
Reduce the heat to medium and add butter and mushrooms. Saute mushrooms for 4-5 minutes making sure to season them with salt and pepper lightly. Add Marsala wine, sherry, cream, and chicken stock allowing the liquid to reduce slightly – approx. 3 minutes. Pour mushrooms and sauce over chicken and serve. Enjoy!


***Most Chicken Marsala's are served over pasta. Instead, we made homemade mashed potatoes and served the Chicken and Marsala mixture over the top. It was to die for and a little Southern twist on an Italian dish.***

Couples Tool Shower

A few weekend's ago, we helped host a couples tool shower for the soon to be married Mr. and Mrs. Wilbanks. Everything turned out perfect and it was a great night with great friends.







Everything was "tool and garden" themed. We had flower pots, mason jars filled with nails, and attire for the bride and groom. We chose to have the shower at a local Mellow Mushroom. It was a middle point for out of town guest and ended up being a perfect location. We enjoyed bruschetta, Caesar salad, and different pizza's. The staff were amazing and so helpful. Hope everyone had a great time and we can't wait for the wedding in a few short weeks!
