Lemon Blueberry Pound Cake
3 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup butter
3 tablespoons lemon zest
2 cups sugar, divided
6 large eggs, divided
1 teaspoon vanilla extract
8 ounces sour cream
1 pound frozen blueberries, tossed
with 1 tablespoon flour
Powdered sugar for dusting
Preheat oven to 350 degrees. Grease and flour large Bundt pan. Set aside.
Sift together flour, baking soda and salt; set aside. Cream together butter, zest and 1 3/4 sups of sugar at medium-high speed with an electric mixer until light and fluffy. Add egg yolks, 2 at a time, beating just until blended after each addition. Add vanilla, and beat beat to incorporate. Add flour mixture to butter mixture alternately with the sour cream, beating at low speed after each addition, beginning and ending with the flour mixture. Set aside.
In second mixing bowl, beat egg white at high speed with an electric mixer until foamy. Gradually add remaining 1/4 cup sugar, beating until stiff peaks form. Fold a third of the egg whites into cake batter. fold remaining egg whites until almost incorporated; carefully fold in blueberries. Transfer batter to prepared Bundt pan.
Bake at 350 degrees for 1 hour and 15 minutes or until toothpick inserted into the center comes out clean. Cool in pan on a wire rack for 10 minutes. Turn cake out onto rack over a sheet pan. All to cool completely. Serve with a dusting of powdered sugar. Enjoy!
On another note, I couldn't be more happy on this Good Friday! Not only do Sam and I get to see our family this weekend but our Honeymoon plans have been booked. We seriously have been going back and forth about where to go. We had initially decided on Europe but it ended up being WAY MORE than we wanted to spend. So we decided on ST. LUCIA!
We are staying at the lovely Sandals Grande for 3 nights.
